Paella Recipe: Rice with a twist

Paella is a traditional Spanish rice dish that is filled with a variety of flavorful ingredients, including seafood, chicken, vegetables, and spices. It is a popular choice for special occasions and gatherings, and it is relatively easy to prepare with the right ingredients and measurements.

What you Need

 2 cups of short-grain rice (preferably Valencia or Bomba)

 1  medium onion, diced

2  cloves of garlic, minced

1 red bell pepper, diced

 1 green bell pepper, diced

 1 cup of peas (fresh or frozen)

 1 cup of diced tomatoes

 1 cup of chicken broth

 1 cup of white wine

 1 teaspoon of paprika

 1 teaspoon of turmeric

 1 teaspoon of cumin

 1 teaspoon of saffron

 1 pound of seafood (such as shrimp, mussels, and clams)

 1  pound of chicken, cut into bite-sized pieces

Olive oil

 Salt and pepper to taste

Steps

  • To prepare the paella, start by heating a large, shallow pan over medium heat. Add a few tablespoons of olive oil to the pan, andthen add the diced onions and minced garlic. Sauté the onions and garlic until they are fragrant and translucent, about 5 minutes.

  •  Next, add the diced bell peppers, peas, and tomatoes to the pan. Sauté these ingredients for an additional 5 minutes, or until theyare tender.

  •  Then, add the rice to the pan and stir to combine it with the vegetables. Add the chicken broth, white wine, paprika, turmeric, cumin, and saffron to the pan, and stir to combine. Bring the mixture to a boil, and then reduce the heat to low. Cover the panwith a lid and let the rice cook for 20-25 minutes, or until it is tender and most of the liquid has been absorbed.

  •  While the rice is cooking, heat a separate pan over medium-high heat. Add a few tablespoons of olive oil to the pan, and then add the seafood and chicken to the pan. Cook the seafood and chicken until they are fully cooked, about 5-10 minutes.

  •  When the rice is finished cooking, add the seafood and chicken to the pan and stir to combine. Season the paella with salt andpepper to taste, and then let it cook for an additional 5 minutes to allow the flavors to meld together.

  •  Serve the paella hot, garnished with fresh herbs and lemon wedges. Enjoy!
