What you need
- 1 pound of either fresh or frozen okra(finely chopped or roughly blended).
- 1 pound beef or fresh fish or dried fish or all three( I used beef)
- 1/2 cup grounded egusi aka melon seed (optional and you can use more if you want, I prefer a little).
- One small red onion ( I prefer using red onion to yellow onion)
- 1/2 pound of schrimp
- One big fresh tomato
- 1 tablespoon of grounded crayfish
- Salt and beef stock to taste
- Spinat (optional, did not use it)
How to:
- Boil your meat with salt and beef stock cubes. Add one chopped tomato half chopped onion into the meat. Water should be the same level as meat.
- Use a little amount of water and mix your grounded egusi into a paste.
- Add your egusi paste halfway through the cooking and let it continue boiling for 20minutes.
- Add one tablespoon of crayfish.
- Finely chop or roughly grind your okra together with the rest of your onion(I chopped my okra into big pieces then roughly blended it for about 30 seconds).
- When your egusi and meat are cooked, add your okra. While checking if your salt and stock cubes are tasty enough.
- after 5mins of adding your okra, add your shrimps and let it cook for the 10minutes.
- Spinat should be added last( if used) and your ready to serve your okra soup.
N.B Okra soup can be eaten with either Fufu, Garri, Couscous, or rice. It is cooked differently widely across Africa. Should be served hot.
