Potato Hotpot-your regular lunch idea

Ingredients:

20 medium sized Potatoes

Meat or chicken or fish or shrimps.

6 fresh tomatoes & 2 Tablespoons of tomato paste

2 big garlic clove

1 Tablespoons of grounded ginger

Chopped persley

1 big red onion

1/2 bell pepper

2 medium sized carrots (chopped into desired shapes)

14-16 green beans (chopped to desired shapes)

Beef stock cube & salt to taste

1 teaspoon of white pepper

Half cup of water

One cup of vegetable oil

Oil to deep fry


How to:

Chop your meat into desired sized and boil with some salt and stock cube.

Blend together your tomatoes (fresh & paste), garlic, ginger, parsley, bell pepper, white pepper and half onion.

Chop the other half of your onion and set aside.

Peel your potatoes, wash and let it drain

Heat up some oil and start to deep fry your potatoes

Take your potatoes out when it’s golden brown and set aside.

When your meat is ready take out the meat from its stock and set stock aside.

Heat up one cup of vegetable oil in a pot.

Fry in your onion for about 2minutes then add in your meat & blended ingredients

After frying for about 10minutes,pour in half cup of water and let it cook till water dries up.

Keep frying till tomotoes turns dark red (making sure it’s not burnt )

Meanwhile boil some water and pour into your chopped carrots & beans and set aside.

When your tomatoes is ready, add in your fried potatoes and incorporate well into the cooked tomatoes sauce.

Pour in 3/4 cup of meat stock and taste your food in case you need to add more salt or stock cubes.

Add in your carrots and green beans at the end and let it cook till the meat stock is dried.

Your hotpot is ready to be served.


Notes:

We fry the potatoes before cooking to prevent it from over cooking and getting too soft.

We include the green beans and carrot at the end to retain its fresh color.
