How to Make the most delicious Garden Egg Sauce(Stew).

Ingredients

15 Medium sized Garden egg

4 Big fresh tomatoes

2 Small sized or One Big Markerel fish

1 Big Onion

1 Tablespoon grounded Crayfish

Salt & Seasoning to taste

Vegetable Oil

How to:

  • Boil your garden eggs till soft, tender and colour changes from green to dark green (About 30minutes).

  • Place them in cold water and let it cool down for about 15 minutes.

  • Peel the skin off your garden eggs.

  • Blend mildly making sure it is not completely smooth and set aside.

  • Chop up your tomatoes and onions and set aside.

  • Prepare your fish and cut them into desired sizes.

  • Deep fry your fish till golden brown and set aside.

  • After your fish is ready, use some of the oil to fry your tomatoes and onion. Fry for about 20minutes while constantly stirring.

  • Add your crayfish, salt and seasoning (this step can also be done after you add your garden egg).

  • Add in your garden egg and half cup of water.

  • Taste to make sure your seasoning is settled.

  • Let it cook till the water dries and your sauce start to fry.

  • Taste to make sure your garden eggs are well cooked (does not taste raw)

  • Add your fish at the end, reduce flame and let it cook for another 10 more minutes.

Your Garden egg sauce is ready! Serve with boiled plantain, coco-yams or anything of your choice.
